SIDNEY DAVENPORT-TROND, Chef/Owner/Operating Manager
After ten years in the advertising and marketing industry, Sidney was ready for a career change. With a love of food and cooking, Sidney was accepted into the culinary arts program at The French Culinary Institute. Upon graduating, Sidney moved to Nantucket, MA, to join the team at Topper’s at The Wauwinet so that she could gain first-hand experience in the restaurant business. Working with Executive Chef Chris Freeman, formerly of The Mayflower Inn in Connecticut, Sidney served as an evening garde manger and pastry chef seasonally for two years. During the winter months, she worked as a freelance writer and in various local establishments.
In 1999, Sidney accepted a job managing Oran Mor restaurant. During her two years as restaurant manager, Oran Mor received its highest service ratings from Zagat’s and was named by Fodor’s Guide as the island’s best restaurant. In addition, Oran Mor grew from a seasonal to year-round restaurant and became a favorite and respected establishment among local and seasonal clientele.
Sidney moved in the fall of 2000 to St Michaels, with her husband, Jim, to open Gourmet By The Bay. For years, she prepared all of the breads on premise, was responsible for most of the baking, arranged and facilitated all of the catering events, handled the bookkeeping, and helped manage the shop.
With the opening of Shore Restaurant & Lounge, Sidney became responsible for overseeing the management and financial aspects of the entire company, Gourmet by the Bay and Shore included. On a daily basis, she was coordinating catering events, managing the restaurant, and as necessary, cooking in one of the kitchens. Today, with Shore Restaurant now closed, Sidney focuses all of her efforts on creating one-of-a-kind events for her clients.
Sidney also holds a B.A. in Journalism from the University of North Carolina at Chapel Hill.
